Bring 2 cups of apple juice to a boil in a large saucepan. Add amaranth. Stir and cover. Reduce heat to medium. Cook for about 15 minutes until tender. Stir in additional cup of apple juice, raisins, vanilla, lemon juice, lemon zest and cinnamon. Bring to a boil. Reduce heat and simmer for 15 minutes. Stir in chopped almonds. Pour pudding into individual dessert bowls and chill. Garnish with grapes, berries or fruit.
