Favorite Way to Make Coffee: John Pitman, J. Brooks Coffee

I love a French press. You’ll find several types in my house, but my favorite is a Sterling Pro, 1 liter. It has a double screen for extra filtering and heat-resistant glass for durability in the dishwasher.

I use 1/4 oz. of coarse-grind coffee to 4 oz. of water.

Heat the water to 190°–195°, then pour it slowly onto the grounds in the press. Stir it gently for 5 to 10 seconds. The coffee grounds will rise to form a “crust of coffee” atop the water.

Set the press lid on top of the press, and let it steep for 4 minutes.

Push the plunger down slowly to avoid pulling up any chalk or grit.
