French Leek Pie

Preheat oven to 375°.

Add olive oil to a large saucepan over medium heat. Stir in leeks. Cook for about 10 minutes or until leeks are soft. Season with salt and pepper.

Reduce heat to low and stir in half and half and cheese.

Line pie plate with prepared pie crust. Trim and flute edges. Pour mixture into pie crust.

Bake for 30 minutes or until golden brown on top.

Cool for about 15 minutes before cutting.


  • 1 prepared, unbaked pie crust
  • 1 tablespoon olive oil
  • 3 leeks, dark green leaves removed and discarded, white and light green parts washed and chopped
  • 1 cup half and half
  • 8 ounces Gruyere cheese, shredded
  • Salt and pepper, to taste
